This is one of my absolute favorite sandwiches. I make it for lunch fairly often and dinner occasionally. For me, the thing that makes this sandwich more awesome than a regular roast beef sandwich is the bread. I always use garlic naan. If you haven't had naan before, you don't know what you're missing. It's a type of flatbread, but it's puffy and soft; it's not tough like some flatbreads can be. Once you heat it up and all that garlic aroma gets released, mmmm...
Sorry. I was having a moment. If you can find actual Cajun roast beef, definitely use that. We found one Kroger when we were living in Indiana that sold it, but we haven't found anywhere out here yet unfortunately. If you can't find that, just go with whatever roast beef you can buy from your deli and season it with a pinch of Cajun seasoning while it's cooking. I often also toss on few slices of cold, ripe tomato on this sandwich before I eat it, but I forgot to buy some this time. Oops. It's still tasty without it though.
Ingredients
1/2 tsp butter
1 clove garlic, minced
2 tbsp diced onion
1/4 c diced mushrooms
4 oz sliced Cajun roast beef
Pinch of pepper
1 garlic naan
1/2 - 1 tbsp mayonnaise
1 slice Swiss cheese
Directions
Place the butter, garlic, onion, and mushrooms in a pan over medium heat and sauté 2-3 minutes. Add roast beef slices and pepper to pan and cook an additional 2-3 minutes, flipping roast beef halfway through.
Meanwhile, spritz flat side of naan with a tiny bit of water and place flat side down in a heated pan. Heat 1-2 minutes. Remove from pan, and top flat side with mayonnaise. Add vegetables and roast beef to half the naan and cover with Swiss cheese. Fold other half of naan over top.
