Chopped Challenge #2, Part 2: Fried Leek Biscuits


*I'm splitting this post into two parts, one each for the entree and the side dish.

To compliment the turkey and dumplings that Justin made for Chopped Challenge #2, he also made fried leek biscuits. You could really do this with whatever you wanted to fry. You could fry up some jalapenos and make spicy biscuits. You could fry up some apples and cinnamon and make dessert biscuits. You could fry up some bacon and make--be right back, I've got bacon biscuits to make...

Anyway... These biscuits are really easy because you use refrigerated biscuits (the kind that come in a can). You could make homemade biscuits, and I'm sure that would make them better. Let's be honest though; biscuits in a can are pretty tasty anyway, so it's not really necessary to make them from scratch.


Ingredients

1 1/2 tbsp butter
1/8 c diced leeks
8-10 refigerated, homestlye biscuits


Directions

In a small pan over medium heat, sauté leeks in butter until tender. Spread half the leeks and butter in the bottom of a greased, round pan. Place biscuits in pan, and top with remaining leeks and butter. Bake biscuits 15 minutes at 400 F or until golden brown.
